Whole milk, fresh cream and a little sugar, churned slowly. Nothing else, so there is nowhere to hide.

Every flavor gets one of Purpo’s arms. When a new one arrives, an old one retires, so there are always exactly eight. Here they are, with what goes into them and how to say them at the counter.
Pistacchio
Pistacchiopee-STAHK-kyoh“pistachio”
Tastes like a green hill in the sun.
Roasted Bronte pistachios ground into paste, then whole milk and cream. The color is the nut: olive green, a little brown, never neon.
Fragola
FragolaFRAH-go-lah“strawberry”
The pinkest thing that’s actually real.
Ripe strawberries, seeds and all, folded into fresh cream with a squeeze of lemon. Pink because strawberries are.
Limone
Limonelee-MOH-neh“lemon”
It makes your nose wiggle.
Amalfi lemon sorbetto: juice, zest, water and sugar. Sharp, bright and dairy-free.
Nocciola
Nocciolanoh-CHOH-lah“hazelnut”
Like the best chocolate spread, minus the jar.
Piedmont hazelnuts toasted until the kitchen smells like a bakery, then ground smooth into whole milk.
Cioccolato
Cioccolatochok-oh-LAH-toh“chocolate”
The serious one. Very serious. Very chocolate.
Fondente style: dark chocolate and pure cocoa churned with water instead of cream, so it tastes darker than it looks.
Amarena
Amarenaah-mah-REH-nah“sour cherry”
Find the cherry treasure.
Fior di latte rippled with Amarena cherries in their own dark syrup. Sweet milk, sour fruit.
Cielo
CieloCHEH-loh“sky”
The only blue thing you’re allowed to eat.
Sweet milk gelato with vanilla and a ribbon of wildflower honey. The blue is a pinch of spirulina, a tiny sea algae, and it is the only color we add.
Inchiostro
Inchiostroeen-KYOH-stroh“ink”
There isn’t one. Officially.
Black cocoa gelato with flaky sea salt. No squid ink, just very dark cocoa. Only for people who found Purpo eight times.

The Deep
Where retired flavors swim.
When a new flavor takes an arm, the old one swims off to the Deep with the month it left. Nobody has retired yet. Purpo is still on his first eight.
